Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 corn tortillas

  • 1 can (15 oz) crushed tomatoes
  • 2 tablespoons chipotle chili powder
  • 1 teaspoon ground cumin

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, heat olive oil over medium heat, add onion, and cook until soft. Stir in garlic, crushed tomatoes, chipotle chili powder, cumin, and jalapeño. Simmer for 10 minutes.
  3. In a large bowl, combine shredded chicken with half of the spicy enchilada sauce.
  4. Soften tortillas in the microwave for 30 seconds. Fill each tortilla with chicken mixture and a sprinkle of cheese, then roll and place seam-side down in a baking dish.
